I m not too sure of where you get bamboo shoot in Delhi, and fresh one in that. You can check out INA, though I have never came across. I have seen it being used in Chinese restaurants, so It should be available. there is this market near Munirka, I heard that many of the NE herbs are available there. Not sure about Bamboo shoots though. I have it sent from home whenever some one comes :)

How to prepare Akhuni from fresh Soya.... well, I don't have the ingredients :) .. It is fermented Anaerobically in some traditional basket covered with a very specific leaf of some tree..

But of course I know a lot of Akhuni based recipes and would post them soon.

One of my goals in life is to eat my way across India - now I have some specific things I need to ask for.

I have an odd question - what type of deer are you eating? I have had white tail deer here in the US and it is very strong in taste.
