Rice Kheer

Kheer.

Rice cooked in milk. An excellent dish, and this is the first solid food that a kid eat in Manipur. And also on the fifth day of birth of a child, we celebrate the first birthday of sorts called Swasti Puja, and then also we feed the guest with Kheer along with other sweet meats, in short we welcome a human being to earth with Kheer. This is a very special dish.

I had cooked this dish but couldn’t post it, and I remembered when i saw a similar recipe on Zou’s. So here it goes:

  1. Boil 1 ltr milk and when the milk start to rise, stir well.
  2. Add some bay leaves and 4-5 crushed cardamoms,
  3. Now add 3/4th of a cup of washed rice, kolam or basmati.
  4. Keep stirring till the rice becomes soft and the mix becomes thick.
  5. Add 2 TBS of grated coconuts and sugar to taste.
  6. Cook for 5 more minutes, you may add dry fruits like raisins, cashews and Badam(crushed).
  7. Add 1 TBS of desi ghee.
  8. Serve hot.

PS: A little milk maid makes the dish taste great.

Your kheer looks and sounds yummy. I’ll certainly give it a try. I would have never thought about using bay leaves. That’s an interesting flavour addition.

Bay Leaves is something new for me… I’m gonna surely try this out… Moreover, I have my little one also.. who has just started with cinnamon as the first spice in her food. So I am gonna make this & share it with my daughter. Will let you know how it comes out..

@ Tina: OH, Bayleaves give a very good flavor to Kheer, and so do Coconut. Put fresh coconut if you have,, and we also use edible camphor in kheer. I couldn’t find it in the market..

Bay leaf in kheer? Never heard of that being done before… but I’m willing to try. Your kheer looks so beautifully creamy and white!

Tony that kheer looks so good. I have never cooked kheer as I dont have a sweet tooth but looks like that picture is going to change all that!

Mmmm, I love kheer. I have a recipe I make that is almost as good as our favorite restaurant’s version.

It’s no wonder that you made kheer since it is your your bday. Milkmaid makes kheer yummy. I have always put coconut into kheer and people thought I was crazy though they liked the taste. Now I have proof that it is indeed a good idea:)
